Beef and Cheese Manicotti

Prep Time 15 minutes
Cook Time 40 minutes

Ingredients

  • 4 tsp Olive Oil
  • 1 Med Onion Coarsely Chopped
  • 1 LB Hot Italian Sausage
  • Salt
  • Freshly Ground Pepper
  • 8 Oz Manicotti 14 shells
  • 15 Oz Whole Milk Ricotta
  • 3 Cups Shredded Mozzarella
  • 1 Cup Grated Parmesan
  • 2 Tbsp Fresh Italian Parsley Leaves Chopped
  • 2 Cloves Garlic Minced
  • 3 Cups Marinara Sauce
  • 2 Tbsp Butter Cut into pieces

Instructions

  • Heat a heavy medium skillet over medium heat. Add 1 tsp of the Olive Oil, onion and Sausage. Season with Salt and Pepper. Sauté until the meat browns and the onion is translucent, about 5 minutes. Remove from heat and cool.
  • Brush 1 tsp of Olive Oil over a large baking sheet. Cook the Manicotti in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 4-6 minutes. Using a slotted spoon, transfer the manicotti from the pot to the oiled baking sheet and cool.
  • Meanwhile, combine the ricotta, 1 ½ to 2 cups mozzarella cheese, ½ cup parmesan and Parsley. Add the Garlic, Salt and Pepper to taste and mix. Stir the cooled meat mixture into the cheese mixture.
  • Preheat oven to 350° F.
  • Brush the remaining 2 tsp of Olive Oil over a 9 x 13 glass baking dish. Spoon 1 ½ cups of Marinara Sauce over the bottom of the prepared dish. Fill the Manicotti with the cheese-meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over it.
  • Sprinkle the remaining 1 ½ cups of Mozzarella cheese, then the remaining ½ cup of Parmesan Cheese over the stuffed pasta. Dot the entire dish with the Butter pieces. Bake the Manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30-35 minutes. Let the Manicotti stand for 5 minutes and serve.

Christmas Prime Rib

Prep Time 15 minutes

Ingredients

  • 6 LB Boneless Prime Rib Roast
  • 2 Tbsp Horseradish
  • 2 Tbsp Dijon Mustard
  • 2 tsp Kosher Salt
  • 2 tsp Coarsely Ground Black Pepper
  • 2 tsp Dried Thyme
  • 2 tsp Garlic Powder
  • 2 Stalks Celery Cut into 2 inch pieces
  • 1 Carrot Cut into 2 inch pieces
  • 1 SM Unpeeled Onion Quartered and Separated
  • 2 tsp Concentrated Beef Base
  • 1 ½ Cups Water
  • 1 tsp Cornstarch
  • 1 tsp Water

Instructions

Step 1

  • The day before serving, remove the roast from the package, and dry thoroughly with paper towels.
  • Set the roast on a baking sheet and place in refrigerator overnight.
  • Remove from refrigerator 1 hour before cooking time to allow meat to reach room temperature.
  • Rub the roast all over with horseradish and dijon mustard.
  • In a bowl, mix together the kosher salt, black pepper, thyme and garlic powder. Sprinkle the spice mix over the roast.

Step 2

  • Preheat oven to 450° F.
  • Place the celery, carrot and onion pieces into the bottom of a roasting pan.
  • Place the roast on top of the vegetables.

Step 3

  • Roast in preheated oven for 30 minutes.
  • Reduce oven temperature to 350° and roast until the meat is browned and an instant-read thermometer inserted into the thickest part of the roast reads 130° to 135° for medium rare.
  • Remove from oven, transfer roast to a platter and cover with a tent of aluminum foil.
  • Allow to rest for 30 minutes.
  • Temperature of the meat will rise about 10 degrees during resting time.

Step 4 – Au Jus

  • Skim excess fat from the pan drippings in the roasting pan.
  • Place the pan over a burner set to medium heat and stir in the beef base and 1 ½ cups of water.
  • Bring to a boil, scraping and dissolving any brown flavor bits from the bottom of the pan.
  • Strain out and discard the vegetables.
  • Combine the cornstarch and 1 tsp water in a small bowl and whisk the mixture into the sauce.
  • Allow the sauce to thicken slightly, pour into gravy boat and serve with roast.

Salisbury Steak with Mushroom Gravy

Servings 4

Ingredients

For the Steaks

  • 1 ¼ lbs Ground Beef 90% lean
  • Cup Breadcrumbs
  • 2 Tbsp Minced Onion
  • 1 tsp Italian Seasoning
  • 1 Tbsp Ketchup
  • 2 tsp Colonel Pabst Worcestershire Sauce
  • 1 LG Egg
  • Salt/Pepper to taste
  • 2 tsp Olive Oil

For The Gravy

  • 1 Tbsp Butter
  • ½ Cup Sliced Onion
  • 8 Oz Sliced Mushrooms
  • Salt/Pepper to taste
  • 1 ½ Cups Beef Broth
  • 1 Tbsp Ketchup
  • 2 tsp Colonel Pabst Worcestershire Sauce
  • 1 Tbsp Cornstarch
  • 1 Tbsp Chopped Parsley

Instructions

  • In a large bowl, mix together the Beef, Breadcrumbs, Onion, Italian Seasoning, Ketchu, Colonel Pabst Worcestershire Sauce, Egg and Salt and Pepper.
  • Form the meat mixture into 4 equal sized oval shaped patties
  • Heat the Olive Oil in a large pan over medium-high heat
  • Place the patties in the pan in a single layer. Cook for 5-6 minutes on each side or until golden brown and cooked through.
  • Remove the meat from the pan. Place on a plate and cover with foil.
  • Melt the Butter in the pan. Add the Onion and Muchrooms and season with Salt and Pepper.
  • Cook for 3-5 minutes or until vegetables have softened. Whisk in the Beef Broth, Ketchup and Colonel Pabst Worcestershire Sauce and bring to a simmer.
  • In a small bowl, mix the cornstarch with 2 Tbsp of Cold Water.
  • Add the Cornstarch mixture to the pan and whisk until smooth. Cook 1-2 minutes or until sauce has just thickened.
  • Add the Meat back to the pan and spoon the gravy over the top. Sprinkle with Parsley and serve.

Black and Blue Steak Salad

Servings 4 1 1/2 Cup

Ingredients

  • 4 OZ Whole-Wheat French Bread Baguette Cubed
  • Cooking Spray
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/4 tsp Paprika
  • 1 12 OZ Flank Steak Trimmed
  • 1/4 Cup Extra-Virgin Olive Oil
  • 2 Tbsp Balsamic Vinegar
  • 1 tsp Dijon Mustard
  • 4 Cups Arugula Firmly Packed
  • 1/2 Cup Red Onion Vertically Sliced
  • 1/2 Ripe Avocado Chopped
  • 1/4 Cup Blue Cheese Crumbled

Instructions

  • Preheat broiler to high.
  • Arrange bread on a rimmed baking sheet, coat with cooking spray.
  • Broil 2 minutes or until toasted, stirring once after 1 minute.
  • Heat a grill pan over medium-high heat.
  • Combine Salt, Pepper, Paprika, and Garlic Powder in a small bowl.
  • Rub spice mixture evenly over Steak.
  • Add Steak to pan, grill 5 minutes on each side for medium-rare or until desired degree of doneness.
  • Place Steak on cutting board. Let stand 5 minutes.
  • Cut across the grain into thin slices.
  • Combine Oil, Vinegar and Mustard in a large bowl, stirring with a whisk.
  • Add toasted bread cubes, Steak, Arugula, and Onion, toss to coat.
  • Divide salad among 4 plates.
  • Top evenly with Avocado and Blue Cheese.
