Blue Cheese Mashed Potatoes with Bacon

Blue Cheese Mashed Potato with Bacon

Servings 4

Ingredients

  • 3 LG Potatoes (Russet, Yukon Gold or Maris Piper)
  • 3 Tbsp Sour Cream
  • 1.2 OZ Whipping Cream
  • 2.6 OZ Salted Butter
  • 3.5 OZ Creamy Blue Cheese
  • 3 Strips Bacon
  • Salt
  • Pepper

Instructions

  • Peel the Potaties and cut into chunks.
  • Put into a pot and cover with cold water.
  • Put Stove Top on high and bring to a boil. Boil for 20 minutes until Potatoes are soft.
  • While the Potatoes are boiling, cook the Bacon. Put to side to cool.
  • When the Potatoes are cooked, drain the water and return to pot. If using a potato ricer, pass Potatoes through this and into the pot.
  • Add the sour cream, whipping cream, butter and a generous pinch of salt and pepper to the potatoes and mash (or mix until combined if you have used a ricer). Keep going until you have a smooth consistency.
  • Break the cheese into small pieces and add to the potatoes, then break the bacon into small pieces and add in.
  • Combine well and serve.
