Homemade Salsa for Canning

Prep Time 30 minutes
Cook Time 1 hour

Ingredients

  • 9 Cups Tomatoes Peeled and Chopped
  • 2 ½ Cups Green Bell Pepper Chopped
  • 2 ½ Cups White Onion Chopped
  • 4 Med Jalapenos Chopped
  • 8 Cloves Garlic Chopped
  • 6 tsp Canning Salt
  • 1 Cup White Vinegar
  • 12 Oz Tomato Paste

Instructions

  • Remove skins from Tomatoes. To do this make an "X" in the bottom of the tomatoes, then place in boiling water for 60 seconds. Then remove the tomatoes from the water and place directly into a bowl of iced water tro shock. The skins should slip right off.
  • Place all of the ingredients in a large pot (10 Quart) and simmer for 20-30 minutes. Taste, add more spice as needed.
  • Process jars using water bath for canning.
