Blue Cheese Mashed Potato with Bacon
Servings 4
Ingredients
- 3 LG Potatoes (Russet, Yukon Gold or Maris Piper)
- 3 Tbsp Sour Cream
- 1.2 OZ Whipping Cream
- 2.6 OZ Salted Butter
- 3.5 OZ Creamy Blue Cheese
- 3 Strips Bacon
- Salt
- Pepper
Instructions
- Peel the Potaties and cut into chunks.
- Put into a pot and cover with cold water.
- Put Stove Top on high and bring to a boil. Boil for 20 minutes until Potatoes are soft.
- While the Potatoes are boiling, cook the Bacon. Put to side to cool.
- When the Potatoes are cooked, drain the water and return to pot. If using a potato ricer, pass Potatoes through this and into the pot.
- Add the sour cream, whipping cream, butter and a generous pinch of salt and pepper to the potatoes and mash (or mix until combined if you have used a ricer). Keep going until you have a smooth consistency.
- Break the cheese into small pieces and add to the potatoes, then break the bacon into small pieces and add in.
- Combine well and serve.
